Tonka Bean Syrup

  • 2 cups Granulated Sugar
  • 2 Cups Water
  • 40 Tonka Beans

  • In a medium sauce pot, warm the water and sugar to just below boiling (~185 degrees). Add the Tonka Beans and stir to dissolve the sugar. Remove from the heat and let cool on the countertop for 4 hours. Strain the syrup through a fine mesh sieve and discard the beans. Pour the syrup into a clean glass bottle and store in the refrigerator for up to 8 weeks. Yields: 2¾ cups.

Here is one of the most delicious syrups we make. Tonka beans are the seeds of a flowering tree native to South America and offer-up flavors of vanilla-sugar, allspice, cinnamon, as well as, floral and dried fruit notes. Use this syrup in place of any cocktail recipe prescribing vanilla syrup or to liven up any drink calling for regular simple syrup. Of course, we have several cocktails utilizing Tonka Bean Syrup which we encourage you to try. Cheers!
