The Sun Also Rises

- ¾ oz. Sloe Gin
- ¼ oz. Absinthe
- ¾ oz. Fresh Lemon Juice
- ¼ oz. Simple Syrup
- 3 dashes Peychaud’s Bitters
- 3 oz. Champagne
- Add all ingredients (except the Champagne), with ice, to a cocktail shaker. Shake vigorously and strain into a Champagne Flute over the Champagne. Garnish with a lemon curly-cue.
The Sun Also Rises (a grown up version of the Sloe Gin Fizz) was created by Chicago’s Charles Joly. Its upfront absinthe presence is followed by deep and delicious notes of plum and cherry with a well-balanced tartness.
