The Sun Also Rises

  • ¾ oz. Sloe Gin
  • ¼ oz. Absinthe
  • ¾ oz. Fresh Lemon Juice
  • ¼ oz. Simple Syrup
  • 3 dashes Peychaud’s Bitters
  • 3 oz. Champagne

  • Add all ingredients (except the Champagne), with ice, to a cocktail shaker. Shake vigorously and strain into a Champagne Flute over the Champagne. Garnish with a lemon curly-cue.

The Sun Also Rises (a grown up version of the Sloe Gin Fizz) was created by Chicago’s Charles Joly. Its upfront absinthe presence is followed by deep and delicious notes of plum and cherry with a well-balanced tartness. This cocktail, though great on its own, is amazing alongside a greasy burger or a spicy Thai dish. If you enjoy this, be certain to check out our wonderful variation on it: The Last Sunrise. Cheers!
