Ramos Gin Fizz

Ingredients

  • 2 oz. Gin
  • ½ oz. Fresh Lemon Juice
  • ½ oz. Fresh Lime Juice
  • 1 egg white or 1½ oz. pasteurized liquid egg white
  • 1½ oz. Heavy Cream
  • 4 drops Orange Flower Water
  • 2 tsp. granulated Sugar
  • 1½ oz. chilled Club Soda

  • Add all ingredients, except the Club Soda, to a Boston Shaker and shake vigorously without ice for as long as possible. Add ice and shake vigorously for as long as you are able. Strain into a Collins glass alongside the Club Soda. Add a straw and stir to mix.

Originally dubbed The New Orleans Fizz, this cocktail (created by Henry Ramos in 1888 at his bar: The Imperial Cabinet Saloon), was originally shaken for 12 minutes! It was processed by a line of white-gloved gentleman who would take turns shaking the drink before handing it off to the next fellow. Some bars will use an immersion blender to emulsify the cocktail before shaking with ice, but we prefer to shake it manually for as long as we are able – which is usually about 4 minutes – including a few breaks. There is something about going through the pain of creating this drink which makes the reward – the rich and delicious cocktail – even more enjoyable. Cheers!
