Pisco Sour

- 1½ oz Pisco
- 1 oz Fresh Lemon Juice
- 1 oz Simple Syrup
- 1½ oz Liquid Egg White or 1 Large Egg White
- 3 to 4 dashes Angostura Bitters
- Dry shake the egg white and lemon juice in a Cocktail Shaker, burping every 10 seconds. Add the pisco and simple syrup, with ice, and shake vigorously. Strain into Kramer Glass and top with the bitters.
This cocktail was created by American Victor Morris at his bar in Lima and named after Peru’s port city of Pisco. The liquor “Pisco” is a brandy made from grape must and is this delightful cocktail’s main ingredient. The Pisco Sour is often considered Peru’s national drink. Enjoy it with a spicy meal, some acidic ceviche, or a roasted guinea pig!
