Pisco Punch



  • 2 oz. Pisco
  • ¾ oz. Pineapple Gum Syrup*
  • ¾ oz. Fresh Lemon Juice

  • Add all ingredients, with ice, to a cocktail shaker. Shake to chill and strain into a coupe glass. Garnish with a lemon twist or pineapple cube.

Mix-up this delightful gem – a creation that Rudyard Kipling described as being “compounded (from) the shavings of cherub’s wings.” Created in the 1890’s by Duncan Nicol at San Francisco’s Bank Exchange, this concoction boasts sweet, viscous pineapple richness (courtesy of the Pineapple Gum Syrup) alongside tart lemon to create a delicate and perfumy, cocktail with an stealthy kick.
