Old Sage

Ingredients

  • 1½ oz Gin (Old Tom style or your favorite)
  • ¾ oz Yellow Chartreuse
  • ¾ oz Lime Juice
  • ⅛ oz Agave Nectar
  • 2 Sage leaves (plus one for garnish)

  • Tear the sage leaves in half and drop them into a mixing glass. Muddle briefly, but aggressively. Add the remaining ingredients, with ice, and stir to chill. Strain into a small coupe glass. Garnish with a tiny sage leaf or sprig.

This wonderful, tart, earthy, cocktail gets its sweetness and hint of perfume from the yellow chartreuse. We prefer an Old Tom gin here, as its subtle botanical nature and intrinsic sweetness compliments those similar notes in the chartreuse. If using a London Dry-styled gin, you’ll want to bump up the Agave Nectar to ¼ oz. Enjoy!
