Old Bailey

- 1½ oz Gin (Old Tom style)
- ½ oz Wondermint Schnapps
- ½ oz Fresh Lemon Juice
- ½ oz Falernum*
- Add all ingredients, with ice, to a cocktail shaker. Shake vigorously and strain into a coupe glass. Twist a piece of lemon skin over the cocktail (to express the oil) and discard the skin. Garnish with a tiny mint leaf (optional).

Perfectly balanced, the Old Bailey allows you to appreciate the character of the Old Tom gin, the depth and clovey sweetness of the falernum, a hint of refreshing mint from the Wondermint schnapps, and a crisp acidic bite from the lemon. We based this concoction on the 1920’s-era Bailey cocktail, utilizing two spirits which were popular before their more modern counterparts took over. Old Tom gin is a sweeter, milder recipe – popular prior to when the more heady and botanically sharper London dry gins became the rage following prohibition. Wondermint schnapps is a reinvention of an 1800’s-era peppermint schnapps – with its complex assortment of herbs and botanicals – that stands apart from its modern more syrupy cousins.
