Ginger Beer

- 4 cups Water
- ½ cup granulated Sugar
- ½ oz. full-flavored (dark) Molasses
- 2” Cinnamon Stick
- 2 Star Anise
- 12 Allspice Berries (~1/2 tsp)
- 10 Cloves (~1/2 tsp)
- 1½ oz. Ginger Juice*
- 1½ oz. fresh Lemon Juice
- In a large sauce pot, add the water, sugar, molasses, cinnamon, and star anise. Stir, bring to a light boil, and simmer for 20 minutes. Remove from the heat and add the allspice berries and cloves and let sit for 10 minutes. Strain the mixture into a bowl containing the ginger and lemon juices. Stir and place in the refrigerator until well chilled (4-5 hours). Place into a soda siphon, charge, and serve.
- *To make ginger juice, peal a 7-8 oz plump and firm ginger root. Grate the ginger on a medium-fine grater. Press through a fine mesh sieve to release the juice.
We make our own Ginger Beer for great cocktails like the Moscow Mule, Dark & Stormy, or El Diablo. It adds a great spice needed for these cocktails and is actually not that difficult to make.
