- 2¼ oz Coconut Rum
- 1 oz Platinum Rum
- 1¼ oz Coconut Milk
- ¾ oz fresh Lime Juice
- ¾ oz Rock Candy (or Simple) Syrup
- 10 Mint Leaves
- ½“ square of peeled Ginger Root
- In the glass of a Boston Shaker briefly muddle the ginger with lime juice, discarding the ginger pulp. Add the coconut rum, platinum rum, coconut milk, rock candy (or simple) syrup, and mint with ice and shake vigorously. Strain into a Tumbler over ice.
- Garnish with a Lemon Stalk or Edible Flower.
You’ll be rocking out to this amped-up version of the classic Piña Colada. This delicious combination of rums and coconut are enhanced by the complexities the mint and ginger add, which really call for tweaking the amp up to eleven. We use a platinum “record” rum alongside the coconut rum, and some “rock” candy syrup to make a #1 hit with this one.
