Cocktail Gummy Bears

- Cocktail Gummy Bear:
- Any Standard 3½ - 5oz. Cocktail Recipe, plus
- ½ oz. Water
- 1 Tbsp. unflavored Gelatin Powder
- 2 tsp. Sorbitol Powder
- 1-2 drops Food Coloring (optional)
- *May substitute ⅛ tsp. Citric Acid for any Lime or Lemon juice.
- Most any Spirit or Liqueur:
- 4 oz. Spirit or Liqueur
- ½ oz. Water
- 1 Tbsp. unflavored Gelatin Powder
- 2 tsp. Sorbitol Powder
- 1-2 drops Food Coloring (optional)
- Add cocktail ingredients, water, gelatin, sorbitol, and any food coloring to a medium sauce pot. Over the lowest heat, stir constantly until the gelatin is dissolved (3-5 minutes). Do not boil. Remove from the heat and fill silicone gummy bear molds. Let sit on the countertop for 30 minutes. Cover with plastic wrap and refrigerate for at least 2 hours. Unmold prior to serving. Mix a few drops of mineral oil to the finished Gummy Bears to prevent them from sticking to each other. Yields about 100 Bears. Best when consumed within 2-3 weeks.

The only downside of alcohol and the gelatin/sorbitol backbone which form gummy bears is that ethanol binds very poorly with the sugar-alcohol/collagen matrix. Thus, the alcohol easily evaporates from the gummy bears, leading to a mere 2-3 week shelf life. Of all the curses which plague humankind, this weak affinity is perhaps the worst, meaning you’ll need to consume these tasty beauties within 2 weeks, and keep them in an airtight container until then.
