Brandied Cherries

- 2 lbs whole dark sweet Cherries
- 4 cups Brandy
- 1½ cups granulated Sugar
- 1½ cups Brown Sugar
- 1 stick Cinnamon
- 1 Star Anise
- 2 Cloves
- In a large sauce pan, whisk the sugars and brandy over high heat and bring to a boil. Add the spices and simmer until the sugars are dissolved (about 2 minutes). Add the cherries and return to a light boil. Remove from the heat and let cool to room temperature (2-3 hours). Remove the cinnamon stick and the star anise. Transfer the cherries to a clean lidded container and top with the liquid. Store in the refrigerator for up to one year.
