Cherry Phosphate

Ingredients

  • 2 oz Cherry Liqueur
  • ½ oz Rock Candy (or Rich Simple) Syrup
  • 1 tsp. Acid Phosphate solution
  • 1½ oz chilled Club Soda
  • 4 drops Bittercube Cherry Bark (or 1 dash Cherry) Bitters

  • Stir the cherry liqueur, rock candy (or rich simple) syrup, acid phosphate, and bitters with ice in a Mixing Glass. Strain over the club soda and ice cubes in a Double Old Fashioned Glass.

The Cherry Phosphate is anything but a kids drink made by some jerk. Whether cereal or candies, we love making childhood treats into adult beverages. Soda fountains used to be the place to go for a cola and a scoop of vanilla ice-cream, and a jerk used to be a good thing to be! Acid phosphate is what those jerks used to give the drinks a crisp sour bite without any citric taste. That is why we use it to make this delightful concoction which gives you the classic soda fountain flavor combined with a boozy cherry liqueur.
