- 2 oz Yellow Chartreuse
- 2 oz Pineapple Juice
- 1½ oz Lime Juice
- ½ oz Agave Nectar
- 6 – 1” squares of Yellow Bell Pepper
- Add the pepper and chartreuse to the serving glass. (Use a thick-bottomed, sturdy, glass or prepare this drink in the glass of your Boston Shaker and then transfer it to the serving glass). Muddle aggressively, then add the remaining ingredients to the glass and fill with crushed ice. Swizzle (with a swizzle stick or bar spoon) until well chilled. Top with more ice, add cocktail straws, and garnish with a yellow bell pepper wedge.
We love making swizzles because it gives us a chance to use our swizzle stick. In fact, we love just saying the words: “swizzle stick!” Inspired by the Chartreuse Swizzle (which utilizes Green Chartreuse and Falernum), our Yellow Submarine uses the lighter Yellow Chartreuse and sweet and earthy yellow bell peppers. Sweet, very fragrant and perfumy, this delightful drink is tropical, with the pleasant, earthy pepper notes. DELICIOUS!
