- 2½ oz Lychee Vodka
- 1¼ oz Fresh Lime Juice
- 1 oz Rock Candy (or Simple) Syrup
- 1½ oz Lychee Puree*
- 9 Mint Leaves
- 2 oz Club Soda
- 1 dash Orange Bitters
- *Blend 12 Lychee Fruits and ½ oz Simple Syrup
- Shake lychee vodka, lime juice, rock candy (or simple) syrup, lychee puree, mint leaves and orange bitters with ice in a Boston Shaker. Pour over club soda in a Tumbler Glass.
- Garnish with two skewered Lychee Fruit.
This is such a great drink that it might cause you break out in song – singing the praises of the lychee fruit. Originating in Southeast Asia and grown on large evergreen trees, the lychee is an aromatic and extraordinarily delightful addition to this cocktail – styled from the classic Mojito. We prefer to blend the lychee fruit into a puree instead of muddling, because of its consistency. Don’t worry about finding the fruits fresh, we use canned as the fresh product it is still not that common at most markets. Ask your grocer, try an Asian market, but make every effort to get your hands on some, because this is one great drink!
