Tonka Bean Sazerac

Ingredients

  • 2 oz. Rye
  • ⅓ oz. Tonka Bean Syrup*
  • 2 dashes Peychaud’s Bitters
  • Splash Absinthe

  • Rinse an Old Fashioned glass with the absinthe, discarding the excess. Add the remaining ingredients, with ice, to a mixing glass. Stir to chill and strain into the glass over a large ice cube. Top with lemon oil from the twist of a lemon skin, discarding the peel.

Here is yet another delightful tweak on this wonderful classic. We utilize our Tonka Bean Syrup in place of granulated sugar. The Tonka beans provide flavors of vanilla, allspice, cinnamon, as well as floral and dried fruit notes. The spiciness of the rye complements the syrup very nicely without overshadowing it.
