Ingredients

  • 2 oz Gin
  • ½ oz Beet Juice*
  • ¾ oz Ginger Syrup**
  • ¾ oz Fresh Lemon Juice

  • Add all ingredients, with ice, to a Cocktail Shaker. Shake vigorously and strain into a Champagne Flute.

  • Garnish with fresh Mint.

This cocktail is not only delicious, but it’s beauty will rival the likes of our Pink Nebula or Prickly Pear concoctions. We had this at Chicago’s DrumBAR (as “Hindsight”), but come across this delightful drink at many places with slight variations. This recipe is our favorite. Light, fresh, sweet, and tart, we lean a tad heavy on the lemon, as the citric tartness enlivens the other flavors. A very forgiving cocktail, you can use most any type of gin. We prefer a simple London Dry Gin or the likes of Tanqueray Malacca, Beefeater 24, or Bombay Sapphire East. You can make your own Ginger Syrup or pick some up at an upscale market or liquor store. Once you have it in hand, be sure to try our Ginger Margarita or Khing & I cocktails.
