Ingredients

  • 2 oz Gin
  • ¾ oz Fresh Lemon Juice
  • ½ oz Raspberry Syrup*
  • 1 Egg White (or 1½ oz Liquid Egg White)

  • Vigorously shake the Gin, Lemon Juice, and Egg White in a Cocktail Shaker, burping the Shaker, as necessary, while creating a nice foam. Add the Raspberry Syrup and ice, and shake to chill. Strain into a Coupe Glass.

This wonderful pre-prohibition era cocktail gets its name from the bawdy band of Philadelphia journalists who liked the idea of getting together and drinking. This is their club’s namesake drink, and although pretty and pink, it is a serious gin cocktail. Created around 1910, this cocktail was traditionally sweetened with raspberry syrup, and that remains the best way to go when mixing this drink. Nice, tart, and perfectly sweet! The gin provides a complex botanical background while the raspberry syrup gives the drink it’s subtle sweetness and perfect light-pink color. Pick up some raspberry syrup or make your own. It’s worth the effort for this delightful cocktail.
