Barrel-Aged Brandy Old Fashioned

2015-10-12

Ingredients

  • 2 parts Brandy
  • ¼ part Cherry Heering
  • ⅛ part Cointreau
  • ½ oz. Angostura Bitters per liter of Brandy

  • For a 3-Liter Barrel:
  • 2.25 liters Brandy (3-750ml bottles)
  • 9½ oz. Cherry Heering Liqueur
  • 4¾ oz. Cointreau
  • 1¼ oz. Angostura Bitters

  • Add all ingredients to your barrel. Store for 4 weeks, or more. Swirl before tapping as the Angostura Bitters will settle to the bottom of the barrel. To serve, tap ~3 oz. into an ice-filled mixing glass. Stir to chill and strain into a rocks glass over fresh ice. Garnish with an orange wedge and brandied cherry. If bottling and placing in the freezer, add ¼ oz. water per 6 oz. cocktail.

The Wisconsin-styled Old Fashioned utilizes Brandy, muddled cherry and orange, and is enjoyed, copiously, in our state year-round. Aging it in a charred oak barrel adds hints of charcoal, smoke, and vanilla. Instead of adding muddled fruit to the aging barrel, we use Cherry Heering and Cointreau to add the rich cherry and bright, sweet orange notes that sets the Brandy Old Fashioned apart from the other “improvements” to the granddaddy of all cocktails. Check out our other barrel-aged cocktails and our tools & techniques video about how to manage your cocktail aging barrels. Check out our cocktail college video on the Old Fashioned to learn a bit of history, and sample all of the “improvements” to the old fashioned we have made. Cheers!
