Ingredients

  • 2 oz Gin
  • ¾ oz Lemon Juice
  • ¾ oz Simple Syrup
  • 2 oz chilled Club Soda

  • Add all the Gin, Lemon Juice, and Simple Syrup to a Cocktail Shaker. Add ice and shake to chill. Strain into an ice-filled Collins Glass over the Club Soda. Garnish with a Lemon Wheel and serve with a straw. (If using Old Tom Gin, reduce the Simple Syrup measure to ½ oz.)

An adult lemonade – with gin as the kicker – this great drink is just the ticket for a hot summer’s day. The Brits claim that John Collins invented it, while the Yanks say Jerry Thomas is the originator. Honestly, it’s such a simple drink (gin + lemonade) that it was probably invented many times over before either of them laid claim to this delightful cocktail almost a century-and-a half ago.
