Grapefruit Tonic Syrup

Ingredients

  • Skin of 4 grapefruits, allowed to dry on the countertop overnight
  • Skin of 4 grapefruits, freshly peeled
  • 1 cup Fresh Grapefruit Juice
  • 2½ cups water
  • ½ cup Campari
  • ¼ cup Citric Acid
  • 10 green Cardamom Pods
  • 10 Allspice Berries
  • ⅛ cup chopped Lemongrass
  • ⅛ cup Cinchona Bark, sifted (no powder)
  • ⅛ cup Gentian Root, sifted (no powder)
  • ⅛ tsp. Pectic Enzyme (optional)*
  • Rich Simple Syrup (see instructions)

  • Add all ingredients (except the Rich Simple Syrup) to a large sauce pot and bring to a boil. Stir and reduce the heat to low. Cover and simmer for 30 minutes. Remove from the heat and let sit on the countertop overnight. The next morning, strain the liquid through a double layer of 90-grade cheese cloth, into a 4-cup measuring beaker (the yield, here, will be 2½-3 cups). Add an equal measure of Rich Simple Syrup (2 parts sugar: 1 part water, boiled to dissolve) and transfer to clean stoppered bottles. Store in the refrigerator for up to 3 months. Yields 5-6 cups.
