Brandied Cherries

Ingredients

  • 2 lbs whole dark sweet Cherries
  • 4 cups Brandy
  • 1½ cups granulated Sugar
  • 1½ cups Brown Sugar
  • 1 stick Cinnamon
  • 1 Star Anise
  • 2 Cloves

  • In a large sauce pan, whisk the sugars and brandy over high heat and bring to a boil. Add the spices and simmer until the sugars are dissolved (about 2 minutes). Add the cherries and return to a light boil. Remove from the heat and let cool to room temperature (2-3 hours). Remove the cinnamon stick and the star anise. Transfer the cherries to a clean lidded container and top with the liquid. Store in the refrigerator for up to one year.
