Bee’s Knees

Ingredients

  • 2 oz Gin
  • ¾ oz Lemon Juice
  • ¾ oz Honey Syrup*

  • Add all ingredients into an ice-filled mixing glass. Stir to chill and strain into a Coupe Glass.

  • Garnish with bee pollen, an edible flower, or a lemon wheel.

This classic 1930’s-era cocktail was created by Frank Meier at the Ritz Bar in Paris. It is a nice, tart, sweet, and delightful cocktail. Bee’s knees is a phrase that was coined back in the 1920’s to mean “something great.” It is also the portion of the bee’s anatomy where they store the “good stuff” (the pollen) as they flit from blossom to blossom. We add bee pollen for a garnish, and as it dissolves it provides an earthiness and additional complexity to the drink. We also love floating an edible flower to garnish this as well. It is the bee’s knees after all! (Traditionally it would have been garnished with a lemon wheel.) Get buzzzzzzzed on this delightful classic. Cheers!
