Barrel-Aged Rum Old Fashioned

Ingredients

  • 2.25 liters Aged Rum (3-750ml bottles)
  • ¾ cup Muscovado Sugar (packed) or Sugar-in-the-Raw
  • 3 oz. Water
  • 1¾ oz. Bittercube Cherry Bark Vanilla Bitters

  • (Designed for a 3-liter barrel): Add all ingredients to a large pitcher. Stir (to dissolve the sugar) and pour into your barrel. Store for 1 week to indefinitely. To serve, tap ~3 ounces into an ice-filled mixing glass and stir to chill. Strain into a rocks glass over a fresh ice-cube. Top with orange oil from the twist of an orange skin, discarding the rind.

We love tapping a Rum Old Fashioned from an oak barrel. The rich and delicious cocktail is enhanced 10-fold by the addition of the subtle smokiness and charcoal notes from the charred barrel. This is a great showcase for the rum, so chose one that you like. We use muscovado sugar as our sweetener.
