Barrel-Aged Negroni

2014-07-28

Ingredients

  • 1 part Gin
  • 1 part Campari
  • 1 part Sweet Vermouth

  • Pour all ingredients into a clean oak barrel. Barrel character will be apparent by week 1, and continue to deepen following that. To serve, tap 3 ounces into a mixing glass. Stir, with ice, to chill and strain into a Coupe Glass. Garnish with an orange peel. (Alternately, bottle the contents of the barrel into clean single-serving bottles. Cap, refrigerate, pour into a chilled Coupe Glass, and garnish as described above.)

Barrel-aging a Negroni adds a nice sophisticated, velvety edge to this classic bitter aperitivo. Check out our Tools & Techniques video on Cocktail Aging Barrels to get the particulars, if you’re interested in trying this one. If you’re feeling studious, then consider learning more about the history of this drink from our Cocktail College class on this cocktail; its ancestor and offspring. We appreciate the way aging cocktails in oak barrels provide them a unique depth, smoothness, and complexity with subtle hints of oak and vanilla. Enjoy it as it ages and evolves in your barrel. You’ll notice changes at day 5, with a peak (in a 3-liter barrel) at about 4 weeks. (The larger your barrel, the longer it will take to reach its aging peak.) Check out all of the barrel-aged cocktails we enjoy making. Cheers!
