Ingredients

  • 4½ oz Brut Champagne or Prosecco
  • 1½ oz White Peach Purée*
  • 2 drops Peach Bitters

  • Gently fold the Champagne (or Prosecco), white peach puree, and peach bitters in a Mixing Glass. Pour into a Champagne Flute.

In this classic cocktail from the 1940’s, we utilize a peach puree that we make from white peaches, giving the drink a nice delicate sweet taste. The white peaches are traditionally used to make this cocktail, but any peach can work. The riper the fruit – the brighter and sweeter this drink tastes. You may come across recipes of this cocktail calling for peach liqueur/schnapps. We’re not fans of muddying up the fresh simple taste of the peaches with anything but the champagne, though we stand by our dash of bitters to provide some depth and make this drink sing.
