Tonka Bean Syrup

Ingredients

  • 2 cups Granulated Sugar
  • 2 Cups Water
  • 40 Tonka Beans

  • In a medium sauce pot, warm the water and sugar to just below boiling (~185 degrees). Add the Tonka Beans and stir to dissolve the sugar. Remove from the heat and let cool on the countertop for 4 hours. Strain the syrup through a fine mesh sieve and discard the beans. Pour the syrup into a clean glass bottle and store in the refrigerator for up to 8 weeks. Yields: 2¾ cups.

Here is one of the most delicious syrups we make. Tonka beans are the seeds of a flowering tree native to South America and offer-up flavors of vanilla-sugar, allspice, cinnamon, as well as, floral and dried fruit notes. Use this syrup in place of any cocktail recipe prescribing vanilla syrup or to liven up any drink calling for regular simple syrup.
